Total Time:
1 hr 10 mins
Ingredients
- 450 g Maris Piper potatoes, peeled and cut into chunks (peeled weight)
- 2 medium eggs, separated
- 1/2 Granny Smith apple, peeled, cored and finely chopped
- 50 g cheddar cheese, grated
- 40 g pickle* We used our GH Pantry Partner, Branston.
- 1 pickled onion, finely chopped
- Small handful of chives, finely chopped
- 40 g plain flour
- 60 g panko breadcrumbs
- Vegetable oil, for frying
Directions
- Step 1Bring a large pan of salted water to the boil and add the potatoes. Simmer for 10min. Drain then return to pan and cook over low heat for 1min until very dry. Remove from heat and leave to cool until just warm. Mash – a few lumps are fine.
- Step 2Transfer the mashed potatoes and an egg yolk to a large bowl with the apple, cheddar, ham, pickle, pickled onion and chives with plenty of seasoning. Mix well. Firmly shape into 12 logs, transfer to a plate and chill for 30min.
- Step 3Add the flour to a shallow bowl. Lightly whisk the remaining egg white with the other egg in another shallow bowl. Add the breadcrumbs to a final shallow bowl. Dip each log into the flour followed by the egg and then the breadcrumbs. Set aside on a plate.
- Step 4Heat the oil in a large, deep saucepan until it reaches 180c on a digital thermometer. Carefully lower half the croquettes into the saucepan and fry for 3-4 min, turning occasionally, until crispy and deeply golden. Remove with a slotted spoon and drain on a plate lined with kitchen paper. Repeat with the remaining croquettes.
GH TIP
Use your favourite cheese here - try an intense blue or creamy Parmesan
