750 g (1lb 11oz) whole skin-on fresh salmon fillet
125 g (4oz) caster sugar
125 g (4oz) coarse rock salt
1 Tbsp. cracked black pepper
15 g (1oz) finely chopped fresh dill
Large handful finely chopped fresh mint
Finely grated zest of 1 each orange and lemon
50 ml (2fl oz) Pimm's No 1.
Directions
Step 1
Lay a 750g (1lb 11oz) whole skin-on fresh salmon fillet (small bones removed) in a large glass serving dish, skin-side down. In a bowl mix 125g (4oz) caster sugar, 125g (4oz) coarse rock salt, 1tbsp cracked black pepper, 15g (1oz) finely chopped fresh dill, a large handful finely chopped fresh mint, the finely grated zest of 1 each orange and lemon and 50ml (2fl oz) Pimm's No 1.
Step 2
Pat sugar/salt mixture over fish. Cover with baking parchment. Wrap dish in clingfilm, then top with a roasting tin or plate that fits inside the dish. Arrange some heavy items on top: about four tins of tomatoes are ideal.
Step 3
Chill for 3 days; a briny liquid will run out.
Step 4
To serve, lift fish out and wipe off the salt mixture (don't worry if some bits stay stuck). Lay skin-side down on a board. Use a sharp, long knife to cut thin slices across the grain of the salmon. Serve with lemon wedges, crusty bread, the Cucumber Mayonnaise and Grated Beetroot Salad.
