Ingredients
- 1 2-pound package frozen crinkle-cut fries
- 1 Tbsp. olive oil
- 2 1/2 tsp. barbecue seasoning (we used Spiceology)
- 1/2 cup Greek yogurt
- 1/4 cup mayonnaise
- 1/4 cup flat-leaf parsley leaves, finely chopped
- 2 Tbsp. dill fronds, finely chopped
- 1 tsp. lemon zest plus 1 tablespoon lemon juice
- 1 small clove garlic, finely grated
- Kosher salt and pepper
- 2 small scallions
- 3 oz. Cheddar cheese, coarsely grated
- 3 oz. Monterey jack cheese, coarsely grated
Directions
- Step 1Heat oven to 425°F. On rimmed baking sheet, toss fries with oil, then barbecue seasoning. Arrange in even layer and bake until lightly golden brown and crisp, 30 to 40 minutes, depending on brand.
- Step 2In medium bowl, stir to combine yogurt, mayonnaise, parsley, dill, lemon zest and juice, garlic and 1/4 teaspoon each salt and pepper. Finely chop scallion whites and light green parts and stir into dip; thinly slice dark greens and set aside for serving.
- Step 3Sprinkle cheese over fries and bake until just melted, 1 to 2 minutes more.
- Step 4Transfer dip to serving bowl and serve immediately with fries sprinkled with reserved scallion greens.
