Raspberry-Rose Frangipane Tart
Golden puff pastry is topped with nutty frangipane, jammy berries, and a splash of rose water.

Everyone loves an easy puff pastry recipe—and for good reason. This freezer staple is one of those magical ingredients that can turn into a dessert that tastes good and looks impressive, but actually requires very little effort.
That said, puff pastry can be a little temperamental. While it seems straightforward, it doesn’t always behave predictably in the oven. Getting this tart just right took a few rounds of testing: At first, the oven was too hot, causing the pastry’s edges to brown at the edges before the center cooked through. Lowering the temperature solved that, but then the pastry didn’t puff properly. After some trial and error, we landed on the sweet spot for time and temperature, resulting in a tart that bakes up beautifully every time: crisp, golden, and perfectly set.
The filling is a classic frangipane, an elegant-sounding almond cream that’s made from just a handful of pantry ingredients. Spread in a thin layer beneath a generous scattering of fresh raspberries, it adds a rich, nutty flavor to the pastry. A small splash of rosewater brings a subtle, unexpected note—it’s not overly floral, just enough to make people pause and ask, “What is that?” (in the best way). And for anyone who dislikes having half-used ingredients lingering in the fridge, this recipe uses exactly two 6-ounce containers of raspberries, so nothing goes to waste.
The result is a bakery-worthy pastry that feels special but couldn’t be easier to serve. It’s perfect for an Easter spread, a Mother’s Day brunch, or a casual afternoon with coffee and friends.
Ingredients
- 1 sheet puff pastry, thawed (half of 17.3-oz pkg.)
- 4 Tbsp. unsalted butter, at room temp
- 1/3 cup granulated sugar
- 1/2 tsp. kosher salt
- 2/3 cup almond flour
- 1 large egg
- 1/2 tsp. almond extract
- 1/2 tsp. rosewater
- 12 oz. raspberries
- Confectioners’ sugar, for sprinkling (optional)
Directions
- Step 1Heat oven to 400°F. On parchment paper, gently unfold puff pastry and roll to 12- by 91/2-inch rectangle. Slide pastry with parchment onto cookie sheet. Using sharp paring knife, gently score 3/4-inch border from edges, then use fork to prick pastry all over inside border. Freeze until pastry is firm, 20 minutes.
- Step 2Meanwhile, make frangipane: Using electric mixer on medium, beat butter, granulated sugar, and salt until light and fluffy, stopping in between to scrape down sides,
- Step 32 to 3 minutes. Beat in almond flour until combined into cohesive paste, about 45 seconds. Beat in egg, almond extract, and rosewater until frangipane is smooth, about 1 minute.
- Step 4Spread frangipane in thin, even layer inside pastry border. Scatter raspberries over frangipane, then gently press down to secure in place. Bake until pastry is puffed and golden brown, 27 to 30 minutes.
- Step 5Lightly dust with confectioners’ sugar if desired before serving.
