Ingredients
250 g unsalted butter, melted, plus extra to grease
200 g soft light brown sugar
100 g caster sugar
3 medium eggs, beaten
1 tsp. vanilla bean paste
175 g plain flour
1/2 tsp. baking powder
200 g white chocolate, roughly chopped
100 g tahini
Directions
Step 1Preheat oven to 180ºC (160ºC fan) mark 4. Grease and line a 20.5 x 25.5cm deep roasting tin with baking parchment.
Step 2Beat the sugars into the melted butter, followed by the eggs and vanilla until combined. Fold through the flour and baking powder, followed by 150g of the chocolate. Decant into the prepared tin and smooth the mixture with the back of a spoon so that it evenly fills the tin. Dollop over the tahini and swirl into the batter with a skewer.
Step 3Bake for 30min, until golden brown and set. Leave to cool completely in the tin.
Step 4Once cooled, melt the remaining white chocolate in a bowl over barely simmering water. Remove the blondie from the tin and drizzle over the chocolate. Leave the chocolate to set before slicing and serving.
Make the blondies up to a week ahead; store in an airtight container at room temperature.
