- 6 Tbsp. goose fat
- 1 (4lb) floury potatoes (preferably King Edward), each cut into two or three even-sized chunks
- Step 1
Preheat oven to 200ºC (180ºC fan) mark 6. Put the goose fat into a roasting tin large enough for the potatoes to sit in one layer without touching each other. Put the tin into the oven to heat the goose fat.
- Step 2
Put the potatoes into a pan of cold, salted water, cover and bring to the boil. Cook for 10min. Drain well, and leave to sit in the colander for 2min while the excess moisture evaporates. Shake to roughen up the edges.
- Step 3
When the fat is very hot, add the potatoes and baste well. Roast for 45min-1hr. Leave to cook for 20-25min before turning and basting.
- Step 4
Continue to roast and turn occasionally until the potatoes are crisp, golden and cooked through. Transfer to a warm serving dish.
- Step 5
Get ahead: Boil potatoes as in step two up to a day ahead. Cool and chill. To serve, complete recipe. To freeze, cook potatoes as in step two, parboiling them for 6-7min. Drain and open-freeze on a tray, then freeze in freezer bags for up to one month. To serve, complete recipe from frozen.
