If you're entertaining for a big group with vegetarians, this easy lasagne recipe will be an ideal main dinner course. The sun-dried tomato and black olive give a Mediterranean hint to this delicious dish.
As lasagne recipes go this one is quite easy. A pre-made bolognese sauce is given a Mediterranean lift with the addition of sun-dried tomatoes and black olives.
Preheat the oven to 180°C ( 160°C fan oven) mark 4. Put the butter into a pan and heat to melt it. Add the flour and stir to make a paste, then cook for 1min. Gradually stir in the milk, then bring to the boil and simmer for 5min to make a smooth sauce. Season well.
Step 2
Meanwhile, put the Bolognese sauce into a pan and heat it through to loosen it. Add the sun-dried tomatoes and olives to the sauce and stir well.
Step 3
Lightly grease a 2 litre (3 ½ pint) shallow ovenproof dish. Spread half of the bolognese sauce over the base. Cover it with three lasagne sheets, then spoon half of the white sauce on top. Repeat the layers, then scatter the Cheddar cheese over the top layer of white sauce. Bake for 30-35min or until golden, then serve lasagne with green salad.
