- 2 medium eggs
- 175 g (6oz) caster sugar
- 150 g (5oz) ground almonds (bought)
- 1 Tbsp. Amaretto liqueur
- Step 1
Preheat oven to 170°C (150°C fan) mark 3 and line two large baking trays with baking parchment. Carefully crack one egg into a small bowl. Using your fingers, carefully lift out and discard the yolk. Transfer white to a large bowl. Repeat with the other egg, cracking it into the small bowl and transferring the white to the larger bowl. You should have two whites in the large bowl.
- Step 2
Using a large whisk, beat the egg whites until they hold firm peaks (you should be able to tip the bowl without the egg whites moving).
- Step 3
Add the sugar, almonds and Amaretto to the egg whites, then use a large metal spoon to stir everything together to make a smooth paste.
- Step 4
Dollop teaspoonfuls of the mixture on to the lined tray, spacing them at least 2.5cm (1in) apart - they'll spread as they cook.
- Step 5
Bake for 18-20min until lightly golden. Allow to cool completely on the tray before serving with the jellies.
