For the pickled pineapple
- 125 ml white wine vinegar
- 50 g caster sugar
- 1 tsp. mustard seeds
- 1/2 tsp. coriander seeds
- 1/2 tsp. black peppercorns
- 1 red chilli, sliced
- 1/4 small pineapple, finely chopped
For the grilled cheese
- 1 Tbsp. olive oil
- 40 g butter, softened
- 6 Cheddar cheese slices
- 4 slices sourdough bread
- 1 Tbsp. kimchi, optional
- Small handful coriander, roughly chopped
- Step 1To make the pickle, in a small pan heat the vinegar, sugar, mustard and coriander seeds, the peppercorns and chilli with 100ml water until the sugar dissolves. Bring to the boil, then add the pineapple chunks, simmer for 30sec then empty into a bowl and leave to cool. Pickle for at least 1hr.
- Step 2Heat oil in a heavy-based frying pan over medium heat. Butter the bread slices, flip two butter-side down and top each of those with 3 slices of cheese, breaking to fit. Spoon on some drained pickled pineapple and add some coriander and kimchi, if using. Top with remaining bread slices (butter-side up).
- Step 3Fry sandwiches on one side until golden, then flip and fry for 3min more. Serve immediately.
