In the back of my mind, I know I have several pots and pans that probably need to be retired from service. The non-stick coating has taken a beating over the years and is looking concerningly scratched and flakey... which means at some point, I ate those missing flakes. That can’t be good.

You can’t get a proper golden-brown crust on a non-stick pan! With a bit of technique, you can even fry an egg in it without sticking. I think the brass handle looks so lovely too. I can’t emphasise enough that carbon steel is the best alternative to Teflon you can get.
